Breakfast just got a whole lot better with this simple yet stunning dish! Perfectly poached eggs, creamy smashed avocado served on a bed of peppery arugula and garnished with tinny jewels of pomegranate seeds. A unique combination of savoury, bitter and sweet flavours.

Ingredients

  • 2 eggs
  • 1/2 ripe avocado
  • 1-2 slices low GI bread (Burgen wholemeal Seed or Bakers delight Cape Seed)
  • 1 handful arugula (rocket leaves), washed.
  • 1 Tbsp white vinegar
  • 2 Tbsp frozen or fresh Pomegranate seeds.
  • Pepper to taste.

Instructions

  1. Toast bread, then cover with generous serve of smashed avocado.
  2. To poach egg fill a small saucepan 3/4 full of water add 1 tablespoon of vinegar, bring to the boil then turn down to a simmer (small bubbles that don't burst).
  3. Meanwhile, crack egg into a small cup or bowl.
  4. Now stir the simmering water to create whirlpool effect then wait until the whirlpool begins to slow down and pour your egg into the centre. It should start to forma round shape.
  5. For a gooey, runny egg, use a slotted spoon to remove from the simmering water after 3 minutes. Delicious!
